Martha’s Mom’s Meatloaf

Yields1 Serving
 1 cup Almond Meal
 2 Garlic Cloves
 ½ cup Flat Leaf Parsley
 1 cup Homemade Ketchup
 2 tsp Pepper
 2 ½ lbs Ground Beef
 2 Celery Stalks
 1 cup Spinich Leaves
 3 tsp Dry Mustard
 1 Medium Onion
 2 Carrots
 1 Large Egg
 1 tbsp Course Salt

Heat oven to 375 degrees

Place almond meal in a bowl with the ground beef and mix well

Place onions, garlic, celery, carrots, parsley, and spinach in a food processor and pulse until fine

Add to the meat mixture using hands, mix well

Mix ketchup, dry mustard, salt, and pepper. Add half to the meat mixture mix well

Add egg and mix well

Place in a loaf pan

Spread the rest of the ketchup mixture on top of the loaf

Cook about 90 minutes
