Orange Chicken Skewers

Orange Chicken Skewers

Yields1 Serving
 2 lbs chicken cubed or sliced
 1 Orange
 1 lemon
 1 large onion
 3 tbsp Coconut Aminos
 1 tbsp avocado or olive oil
 2 tsp salt
 2 tsp cumin
 1 tsp dijon mustard
 1 tsp dried thyme leaves
 1 tsp black pepper
 1 bell pepper sliced

Cut the chicken into cubes if you are going to put it on skewers, or slice it into strips for grilling quickly. Cut the onion into quarters and separate in large chunks for grilling ease.

Squeeze the orange and lemon into the bowl, add the rinds into the bowl. Add the rest of the ingredients (except for the bell pepper) and mix thoroughly.

Cover the bowl and place in the refrigerator to marinade for at least 2 hours.

Pull it out and put the items on the skewers or just grill all the pieces as is

Once the food is on the grill, marinade the bell peppers quickly and then add them to the grill.

Cook well and serve.
