Cauliflower- Roasted

Yields4 Servings
 1 head of cauliflower, cut into florets
 2 tbsp melted ghee or butter
 1 shallot, thinly sliced
 1 clove garlic, crushed into a paste
 2 tsp lemon juice
 ¾ tsp salt
 black pepper

Preheat oven to 350

Toss all the ingredients together in a bowl, then spread the cauliflower in the bottom of the prepared baking dish.

Bake for 35-40 minutes, until cauliflower is tender. After 20 minutes, stir the vegetables.
