Prep the steak by salting it up to 2 days before this recipe
Pour in a liberal amount of oil into a cast iron skillet and heat the pan hot for 5 mins with nothing in it, do not let it smoke, on our stove, have it at 3/4 heat, not all the way up
Pull out the steaks and sprinkle them with salt and pepper
With the oil at temp, place the steaks in the pan
Turn the steaks every 30 seconds until they reach the desired temp, this will bring the steaks to temp but not let them burn
Right before the steaks hit the temp they should be, bring the heat on the pan down to 1/4 heat and add the butter and the spices
Remove the steaks from heat and pour the sauce of oil and butter from the pan and pour a little over the steaks
Place herbs from pan on steaks and serve
