2 stalks chopped celery
1 small can black olives
1 cup dry brown rice
1 can drained and rinsed beans or 2 cups cooked
1 onion, chopped
1 clove garlic, minced
1 tbsp oil
1 lemon- juiced
⅓ cup chopped parsley

Cook the brown rice
Heat up the oil in a large pan and heat the onion for 5 minutes, add the celery and garlic- and cook for an additional 5 minutes.
Add the beans and heat through
Add the remaining ingredients and heat through
