Soak the dry beans overnight and then simmer in water for a few hours. DRAIN and rinse well
Roast the chicken in the oven after you have seasoned with salt, pepper, and the greek seasoning
Saute the onions and garlic in butter, ghee, or oil
add in the carrots, celery, and any other veggie you may want and saute to get it some color and flavor
Add in white wine to deglaze the pan, let it cook for a minute or two
Chop up the cooked chicken and add into the pot
Add in the beans
Add in broth to cover all the ingredients
Add in salt, pepper, and greek seasoning to taste
Let simmer for 30 or so minutes
Add in spiralized zucchini and let simmer for another 30 minutes
